Ultimate Roasted Mushrooms

Ingredients
  

  • 1.5 lbs mixed mushrooms cremini, shiitake, oyster, and/or maitake
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme, leaves removed
  • 1 sprig fresh rosemary, leaves chopped
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce or tamari for gluten-free
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Fresh parsley, chopped for garnish
  • Lemon wedges optional, for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Clean the mushrooms by gently wiping them with a damp paper towel. Trim the ends of the stems if necessary.
  3. Slice the larger mushrooms into bite-sized pieces. Leave smaller mushrooms whole.
  4. In a large bowl, combine the sliced mushrooms, minced garlic, thyme, rosemary, olive oil, melted butter, balsamic vinegar, soy sauce, smoked paprika, salt, and pepper.
  5. Toss everything together until the mushrooms are evenly coated.
  6. Spread the mushrooms in a single layer on a large baking sheet. Avoid overcrowding the pan; use two baking sheets if necessary.
  7. Roast for 20-25 minutes, or until the mushrooms are tender and golden brown, stirring halfway through.
  8. Remove the Roasted Mushrooms from the oven and transfer them to a serving dish.
  9. Garnish with fresh parsley.
  10. Serve immediately with optional lemon wedges.

Notes

Experiment with different types of mushrooms. For an even richer flavor, brown the butter before adding it to the mushrooms. Adjust the seasoning to your taste after roasting. Mushrooms can be prepped and marinated up to 24 hours in advance. Don't overcrowd the pan for best results. High heat is essential for caramelization.
