  • 2 large eggs
  • 2 large egg yolks
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups all-purpose flour
  • 1 cup chocolate chips, butterscotch chips, chopped nuts, or any other desired mix-ins optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine the melted butter and brown sugar. Whisk vigorously until smooth and well combined.
  3. Add the eggs and egg yolks, one at a time, whisking well after each addition. Incorporate the vanilla extract.
  4. In a separate bowl, whisk together the salt, baking powder, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. A few streaks of flour are okay.
  6. Fold in your desired mix-ins (chocolate chips, nuts, etc.).
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. The edges should be golden brown.
  9. Let the blondies cool completely in the pan before cutting into squares. Cooling completely is essential for the blondies to set properly and develop their chewy texture.

Notes

For extra chewiness, use dark brown sugar. Store blondies in an airtight container at room temperature for up to 3 days. You can also add a pinch of cinnamon or nutmeg to the dry ingredients for a warmer flavor. For variations, consider adding white chocolate chips, chopped pecans, or dried cranberries.
