- In the carafe of a high-speed blender, combine the frozen strawberries, full-fat coconut milk, 1 tablespoon of sweetener, pure vanilla extract, and the pinch of salt.
- Secure the lid and blend, starting on a low speed and gradually increasing to high. Blend for 45-60 seconds until the mixture is completely smooth, creamy, and no fruit chunks remain.
- Taste the mixture. If it's not sweet enough, add more sweetener. If it is too thick, add a splash of cold water or coconut water and blend for another 10 seconds until it reaches your desired drinkable consistency.
- Pour the refresher into tall glasses. Garnish with fresh strawberry slices and an optional sprig of mint. Serve immediately for the best chilled and creamy experience.
