  • 2 tablespoons honey or maple syrup
  • 1/4 cup chia seeds
  • 1 tablespoon lemon juice optional

Method
 

  1. Prepare the Strawberry Puree: Combine the chopped strawberries and water in a saucepan. Cook over medium heat for 5-7 minutes, stirring occasionally, until the strawberries are softened.
  2. Blend to Smoothness: Carefully transfer the strawberry mixture to a blender or use an immersion blender to puree until completely smooth.
  3. Sweeten and Adjust: Pour the strawberry puree back into the saucepan. Stir in the honey (or maple syrup) and lemon juice. Taste and adjust sweetness as needed.
  4. Incorporate the Chia Seeds: Remove the saucepan from the heat. Gradually whisk in the chia seeds, ensuring there are no clumps.
  5. Let it Sit: Allow the mixture to sit for 5 minutes, stirring occasionally to prevent the chia seeds from settling at the bottom.
  6. Transfer to a Dish: Pour the chia seed mixture into a square or rectangular dish (approximately 8x8 inches) lined with parchment paper. This will make it easier to remove the jelly squares later.
  7. Refrigerate: Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to fully gel.
  8. Cut and Serve: Once the jelly has set, lift it out of the dish using the parchment paper. Cut into squares and serve. Enjoy!

Notes

For a brighter flavor, use lemon juice. Maple syrup can be used as a vegan alternative to honey. Store leftover jelly squares in an airtight container in the refrigerator for up to 3 days. Experiment with different flavors by adding cinnamon, vanilla extract, or other berries to the strawberry puree.
