- Cook the rice according to package directions. While the rice cooks, prepare the avocado by slicing or mashing it. Squeeze a little fresh lime juice over it to prevent browning.
- In a small bowl, whisk together the honey, lime juice, lime zest, and soy sauce. In a separate, larger bowl, season the bite-sized chicken pieces with salt and pepper.
- Pour about one-third of the honey lime mixture over the chicken and toss to coat. Let it marinate for at least 10-15 minutes.
- Heat the oil in a large skillet over medium-high heat. Add the marinated chicken in a single layer, working in batches if necessary to avoid overcrowding. Cook for 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the skillet heat to medium-low. Pour the remaining honey lime sauce into the skillet, scraping up any browned bits from the bottom.
- In a tiny bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry. While whisking the sauce in the skillet, slowly pour in the slurry. Continue to simmer and whisk for 1-2 minutes until the sauce thickens into a glossy glaze.
- Return the cooked chicken to the skillet and toss gently to coat every piece in the glaze. Turn off the heat.
- To assemble, place a layer of cooked rice on a plate. Top with a layer of avocado, then spoon a generous amount of the sticky honey lime chicken over the top. Garnish with fresh cilantro, sliced green onions, and toasted sesame seeds before serving.
Notes
For best results, use fresh lime juice as it provides a brighter flavor than bottled juice. Be careful not to burn the glaze; keep the heat low and stir constantly while it thickens. For extra flavor, add 1 teaspoon of grated fresh ginger to the sauce or a pinch of red pepper flakes for a bit of heat. This recipe is flexible: chicken breast can be used instead of thighs, and maple syrup can be substituted for honey. Store leftovers in an airtight container in the refrigerator for up to 3 days, keeping the avocado separate if possible to maintain freshness.
