Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon soy sauce for chicken marinade
  • 1 tablespoon cornstarch for chicken marinade
  • 1 teaspoon ginger, grated for chicken marinade
  • 1 clove garlic, minced for chicken marinade
  • 1/4 cup soy sauce for sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced for sauce
  • 1 teaspoon red pepper flakes optional
  • 1 tablespoon cornstarch for sauce
  • 1/4 cup water
  • 8 ounces noodles spaghetti, linguine, egg noodles, or ramen
  • 2 tablespoons vegetable oil
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Equipment

  • Large skillet or wok
  • Large pot
  • Small bowl
  • Whisk
  • Measuring cups and spoons
  • Mixing bowl
  • Colander

Method

  1. Prepare the Chicken: In a bowl, combine the chicken pieces with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, grated ginger, and minced garlic. Toss well to coat and let it marinate for at least 15 minutes.
  2. Cook the Noodles: Cook the noodles according to package directions. Drain well and set aside.
  3. Make the Sauce: In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, red pepper flakes (if using), cornstarch, and water. Set aside.
  4. Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Make sure not to overcrowd the pan; you may need to cook the chicken in batches.
  5. Combine Everything: Pour the sauce over the cooked chicken and bring to a simmer. Cook until the sauce has thickened, about 2-3 minutes.
  6. Add the cooked noodles to the skillet and toss to coat evenly with the sauce.
  7. Garnish & Serve: Garnish with sesame seeds and chopped green onions. Serve immediately and enjoy!

Notes

Don't overcrowd the pan when cooking the chicken. Adjust the sweetness by reducing the amount of honey. Spice it up with more red pepper flakes or sriracha. Use fresh garlic and ginger for the best flavor. Marinate the chicken for at least 15 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, adding a splash of water if needed.
