Ingredients

  • 1.5 lbs Salmon fillet, skin on or off, cut into 4 portions
  • 4 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1-2 Red chilies, finely chopped or 1-2 tsp chili flakes, adjust to taste
  • 1 tablespoon Soy sauce low sodium preferred
  • 1 tablespoon Honey or maple syrup for vegan option
  • 1 tablespoon Rice vinegar or lemon juice
  • 1 teaspoon Sesame oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional garnish: Chopped green onions
  • Optional garnish: Sesame seeds

Equipment

  • Large Skillet
  • Small bowl
  • Whisk
  • Measuring spoons
  • Measuring cups
  • Paper towels
  • Fork

Method

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season with salt and pepper.
  2. Make the Spicy Garlic Sauce: In a small bowl, whisk together the minced garlic, chopped chilies (or chili flakes), soy sauce, honey, rice vinegar, and sesame oil.
  3. Sear the Salmon: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place the salmon fillets in the skillet, skin-side down if using skin-on fillets.
  4. Cook the Salmon: Sear the salmon for 4-6 minutes, or until the skin is crispy and golden brown. Flip the salmon and cook for another 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
  5. Add the Sauce: Pour the spicy garlic sauce over the salmon in the skillet. Let it simmer for 1-2 minutes, allowing the sauce to thicken slightly and coat the salmon evenly. Be careful not to burn the garlic.
  6. Serve: Garnish with chopped green onions and sesame seeds (optional). Serve immediately with rice, noodles, or your favorite sides.

Notes

For best results, use fresh, high-quality salmon with good fat content, such as Sockeye or King salmon. Adjust the amount of chili to your preferred spice level. Monitor the garlic closely while simmering the sauce to prevent burning, which can result in a bitter taste. Store leftovers in an airtight container in the refrigerator for up to 2 days.
