Ingredients
  

  • 1.5 lbs ground beef 80/20 blend
  • 1 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 12 slider buns or Hawaiian sweet rolls unsplit
  • 12 slices American cheese or cheddar
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon onion powder
  • Sesame seeds or everything bagel seasoning for topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the diced onion until softened and translucent, about 5 minutes. Add the minced garlic and cook for 1 more minute until fragrant. Remove from heat.
  3. In a large bowl, combine the cooked onion and garlic, ground beef, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently with your hands until just combined, being careful not to overwork the meat.
  4. Press the beef mixture evenly into a rimmed sheet pan to form a uniform layer. Bake for 15 minutes.
  5. Carefully remove the pan from the oven. Tilt the pan and use a spatula to hold the beef in place while you spoon off and discard the excess rendered fat.
  6. Immediately arrange the cheese slices over the entire surface of the hot beef, overlapping slightly. Let sit for 1 minute to begin melting.
  7. Place the entire sheet of slider buns upside down on top of the cheesy beef layer. Press down gently so the bun bottoms make contact.
  8. In a small bowl, whisk together the melted butter, brown sugar, Dijon mustard, and onion powder to make the glaze.
  9. Generously brush the glaze over the tops of the buns, making sure to get it into the seams. Sprinkle with sesame seeds or everything bagel seasoning.
  10. Return the assembled pan to the oven and bake for 12-15 minutes, or until the buns are golden brown and everything is heated through.
  11. Remove from oven and let rest for 5 minutes. Use a large, sharp knife to slice along the bun seams, creating individual sliders. Serve warm.

Notes

For non-greasy sliders, do not skip draining the fat after the first bake. Mix the beef gently to avoid a dense, tough texture. The butter for the glaze must be fully melted. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven or toaster oven for best texture. For variations, try adding bacon jam, jalapeños, or caramelized onions with blue cheese.
