- Prepare the Filling: In a medium bowl, combine the softened cream cheese, chopped smoked salmon, dill, lemon juice, and black pepper. Mix well until all ingredients are evenly distributed.
- Apply the Barrier: Lightly spread a very thin layer of the cream cheese mixture on one side of each Ritz cracker.
- Assemble the Sandwiches: Place a small dollop (about 1/2 teaspoon) of the remaining cream cheese mixture on top of the cream cheese barrier on half of the crackers.
- Top and Garnish: Top with the remaining crackers, cream cheese side down. Gently press the sandwiches together.
- Chill (Optional): For even better stability, chill the assembled sandwiches in the refrigerator for at least 30 minutes before serving.
- Garnish and Serve: Garnish with fresh dill sprigs or a small piece of lemon zest before serving, if desired.

Choose a 'dry' filling to avoid soggy crackers. Spread a very thin layer of softened cream cheese as a moisture barrier. Finely chop ingredients to minimize moisture release.
