Method
- Ensure your chicken is cooked and ready to go. If using pre-cooked chicken, warm it slightly. If starting from scratch, poaching chicken breasts in seasoned broth is a foolproof method for juicy, flavorful results.
- Lightly toast the bread slices. This provides structural integrity and adds flavor.
- In a small bowl, combine the mayonnaise, Dijon mustard, garlic powder, and red pepper flakes (if using). Spread this mixture evenly over one slice of toasted bread.
- Layer the chicken, avocado slices, and cheese on top of the mustard-mayo spread.
- Place the second slice of toasted bread on top.
- Melt butter or heat olive oil in a non-stick skillet over medium heat. Place the sandwich in the skillet.
- Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Use a spatula to gently press down on the sandwich as it cooks to ensure even browning and melting.
- Cut the sandwich in half and serve immediately.
Notes
For the best results, use freshly sliced cheese and avoid pre-shredded cheese. Ensure your chicken is moist and flavorful. Experiment with different spreads and seasonings to customize the flavor to your liking. Leftover pesto or a drizzle of balsamic glaze can also elevate the flavor profile.
