  • ½ cup unsweetened applesauce
  • ¼ cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples
  • ½ cup chopped pecans or walnuts optional
  • Maple syrup or honey for drizzling optional
  • Cinnamon sugar for sprinkling optional

Method
 

  1. Preheat your oven to 375°F (190°C) and place the oven rack in the center position.
  2. Grease a 9x13 inch baking dish with butter or cooking spray, or line it with parchment paper.
  3. Peel, core, and dice the apples into small, even pieces.
  4. In a large bowl, whisk together the dry ingredients: rolled oats, baking powder, cinnamon, nutmeg, salt, and brown sugar. Ensure there are no lumps of brown sugar.
  5. In a separate bowl, whisk together the wet ingredients: milk, applesauce, melted butter, eggs, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few streaks of flour are okay.
  7. Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  8. Pour the mixture into the prepared baking dish and spread it out evenly.
  9. If desired, sprinkle with chopped nuts and/or cinnamon sugar.
  10. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, loosely cover it with foil.
  11. Let it cool slightly before serving.

Notes

For a vegan option, use non-dairy milk, coconut oil instead of butter, and a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water) instead of chicken eggs. Add dried fruit, such as raisins, cranberries, or chopped dates, for added flavor. To prevent apples from sinking, toss the diced apples with a tablespoon of flour or cornstarch before adding them to the batter. Leftovers can be reheated in the microwave or oven. Store leftovers in an airtight container in the refrigerator for up to 3 days.
