Method
- Lay out all 8 slices of bread on a cutting board.
- Spread a thin, even layer of softened butter on one side of each slice of bread.
- Place one slice of cheese on the unbuttered side of four slices of bread. Cut cheese to fit if necessary.
- Top each cheese-covered slice with another slice of bread, butter-side up.
- Place a skillet or griddle over medium-low heat.
- Carefully place the sandwiches in the heated skillet, avoiding overcrowding.
- Grill for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Gently press down with a spatula for even browning.
- Carefully flip the sandwiches with a spatula and continue grilling for another 2-3 minutes until the other side is golden brown and the cheese is fully melted.
- Remove the grilled cheese sandwiches from the skillet and place them on a cutting board to cool slightly for a minute or two.
- Using a heart-shaped cookie cutter, firmly press down on each sandwich to create a heart shape. Repeat for all sandwiches.
- Serve immediately while warm and gooey.
Notes
For best results, use softened butter for even spreading. Cooking over medium-low heat ensures the cheese melts completely without burning the bread. You can assemble the sandwiches ahead of time and store them in the refrigerator until ready to grill. Consider variations like ham and cheese, tomato and basil, or jalapeƱo popper grilled cheese. Serve with tomato soup, salad, or fruit salad. Leftovers can be reheated but freezing is not recommended.
