- Line a large baking sheet with parchment paper and set aside.
- In a very large mixing bowl, combine the Rice Chex cereal and the Lucky Charms cereal. For the best visual result, separate about half of the Lucky Charms marshmallows and reserve them to add at the very end.
- In a microwave-safe bowl, combine the white chocolate chips and unsalted butter.
- Microwave the mixture in 30-second intervals, stirring vigorously in between each interval. Be careful not to overheat, as white chocolate scorches easily. Continue until completely smooth.
- Stir the vanilla extract into the melted chocolate mixture.
- Pour the smooth chocolate mixture over the cereal in the large bowl.
- Use a silicone spatula to gently fold the mixture using a 'scoop and fold' motion. Coat the cereal evenly without crushing the delicate pieces.
- Transfer the chocolate-coated cereal into a 2-gallon zip-top bag. Add the powdered sugar to the bag.
- Seal the bag tightly, trapping air inside so it puffs like a balloon. Shake vigorously until every piece of cereal is coated in white sugar.
- Pour the mixture onto the prepared baking sheet and spread it out into a single layer to cool.
- Sprinkle the reserved marshmallows over the top of the mix.
- Allow the Muddy Buddies to set at room temperature for about 20 minutes before serving.
Notes
Store in an airtight container at room temperature for up to one week. For a nuttier flavor, you can brown the butter before mixing it with the white chocolate. If you cannot find Rice Chex, Corn Chex is a suitable gluten-free alternative, but avoid Wheat Chex as the flavor is too strong.
