  • 1 large bag 12-14 oz
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 2 cups shredded cheddar cheese
  • 1/2 cup pickled jalapeño slices
  • 1/2 cup chopped red onion
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Optional: guacamole
  • Optional: black olives
  • Optional: green onions

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown ground beef over medium-high heat. Drain excess grease.
  3. If using taco seasoning, add seasoning and water according to packet instructions. Simmer for 5 minutes, allowing the flavors to meld. If using shredded chicken, season to taste with taco seasoning or your favorite spices.
  4. Spread refried beans evenly over a large oven-safe platter or baking sheet.
  5. Arrange tortilla chips in a single layer over the refried beans.
  6. Drizzle nacho cheese sauce evenly over the chips.
  7. Sprinkle the seasoned ground beef (or chicken) over the cheese sauce.
  8. Top with shredded cheddar cheese.
  9. Bake in preheated oven for 5-7 minutes, or until cheese is melted and bubbly.
  10. Remove from oven and immediately add jalapeños, red onion, and tomatoes.
  11. Dollop with sour cream and sprinkle with fresh cilantro.
  12. Serve immediately.
  13. Optional: add a scoop of guacamole or some black olives and green onions.
