  • 8 cups fresh, clean snow
  • 1 cup heavy cream or full-fat coconut cream
  • 1/4 cup keto-friendly sweetener Erythritol, Stevia, Monk Fruit
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1-2 tablespoons unsweetened cocoa powder optional
  • Sugar-free chocolate chips optional
  • 1-2 tablespoons peanut butter powder optional
  • Dash of cinnamon optional
  • Nut extracts Almond, hazelnut, or pecan) (optional

Method
 

  1. Chill your mixing bowl in the freezer for 15-20 minutes.
  2. Gather 8 cups of fresh, clean snow.
  3. In the chilled bowl, whisk together the heavy cream (or coconut cream), keto-friendly sweetener, vanilla extract, and a pinch of salt until the sweetener is well dissolved.
  4. Add the snow to the cream mixture a cup or two at a time, gently folding it in with a spatula. Do not overmix.
  5. Continue adding snow until you reach your desired consistency, like soft-serve ice cream. Work quickly.
  6. If using optional flavor boosters, gently fold them in until evenly distributed.
  7. Serve immediately in bowls and enjoy.

Notes

If the snow ice cream is too watery, add more snow. If it's too sweet, add a splash of heavy cream or lemon juice. If it's not sweet enough, add more keto-friendly sweetener. Use powdered sweetener to prevent graininess. This is best enjoyed right away, but can be stored in a freezer-safe container for up to an hour or two. Texture will change.
