Ingredients
  

  • 12 ounces high-quality dark chocolate, finely chopped
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter, softened
  • 1-2 tablespoons liqueur e.g., Grand Marnier, Frangelico, or rum) (optional
  • Cocoa powder, for coating
  • Chopped nuts, for coating
  • Sprinkles, for coating
  • Melted chocolate, for coating

Method
 

  1. Finely chop the chocolate and place it in a heatproof bowl.
  2. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  3. Pour the hot cream over the chopped chocolate. Let it sit for about 1 minute to allow the heat to melt the chocolate.
  4. Gently stir the chocolate and cream together, starting from the center and working your way outwards, until the mixture is smooth and glossy. Be patient; it may take a few minutes.
  5. Stir in the softened butter until it's fully incorporated. If using liqueur, add it now and stir until combined.
  6. Pour the ganache into a shallow dish, cover it with plastic wrap (pressing the wrap directly onto the surface to prevent a skin from forming), and refrigerate for at least 2 hours, or preferably overnight, until firm enough to scoop.
  7. Once the ganache is firm, use a small spoon or melon baller to scoop out portions. Roll each portion between your palms to form a ball.
  8. Place your chosen coating (cocoa powder, chopped nuts, sprinkles, etc.) in a shallow bowl. Roll each truffle in the coating until it's evenly covered. Alternatively, you can dip the truffles in melted chocolate and then decorate.
  9. For a firmer truffle, place the coated truffles on a parchment-lined baking sheet and chill for another 15-20 minutes before serving.
  10. Store the truffles in an airtight container in the refrigerator. They are best enjoyed within a week.
