- Prepare the Chicken: In a bowl, toss the chicken cubes with 1 tablespoon of olive oil, Italian seasoning, paprika, red pepper flakes (if using), salt, and pepper. Ensure the chicken is evenly coated.
- Cook the Chicken: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through. This should take about 5-7 minutes.
- Add Garlic: Reduce the heat to medium. Add the minced garlic and cook for 1-2 minutes, or until fragrant. Be careful not to burn the garlic, as this will make it bitter.
- Assemble the Wraps: Lay out the tortillas on a clean surface. Sprinkle each tortilla evenly with mozzarella, cheddar, and Parmesan cheeses. Top with the cooked chicken and garlic mixture.
- Fold the Wraps: Fold in the sides of each tortilla, then tightly roll up from the bottom.
- Toast the Wraps: Brush the outside of each wrap with melted butter.
- Cook to Golden Perfection: Heat a large skillet or griddle over medium heat. Place the wraps in the skillet, seam-side down, and cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey. Alternatively, you can bake these in a 375°F oven for 10-12 minutes.
- Serve: Cut the wraps in half and garnish with fresh parsley (if using). Serve immediately.
