Ingredients

  • 2 medium sweet potatoes, peeled and sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves, optional
  • Pinch of red pepper flakes, optional

Equipment

  • Baking sheet
  • Parchment paper
  • Large bowl
  • Knife
  • Peeler
  • Measuring spoons
  • Measuring cups
  • Oven

Method

  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and slice them into approximately 1/4-inch thick rounds. Try to keep the rounds as uniform in thickness as possible so they cook evenly.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper. Make sure each round is well coated.
  4. Arrange the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized. Keep a close eye on them to prevent burning.
  6. Remove the sweet potato rounds from the oven and let them cool slightly for a few minutes.
  7. Top each sweet potato round with crumbled feta cheese.
  8. Drizzle honey over the feta cheese.
  9. Sprinkle with fresh thyme leaves and a pinch of red pepper flakes, if desired.
  10. Serve warm or at room temperature.

Notes

Even slicing is key for uniform cooking. Don't overcrowd the pan to ensure roasting instead of steaming. Watch the sweet potatoes closely to prevent burning due to their high sugar content. Experiment with different types of feta, such as flavored feta with herbs or sun-dried tomatoes. For variations, add chili powder or cayenne pepper for spice, sprinkle with toasted pecans or walnuts for crunch, drizzle balsamic glaze for a tangy twist, or experiment with herbs like rosemary, sage, or oregano. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, but note that the sweet potatoes may lose some crispness.
