Method
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
- Lightly grease the waffle iron with cooking spray or melted butter.
- Pour the batter onto the hot waffle iron, using a ladle or measuring cup. Refer to your waffle iron's instructions for the correct amount of batter.
- Close the waffle iron and cook according to the manufacturer's instructions until the waffles are golden brown and crisp (usually about 3-5 minutes).
- Carefully remove the waffles from the iron using a spatula or fork.
- Serve immediately with your favorite toppings.
Notes
Don't overmix the batter for best results. Use melted, not hot, butter. Keep waffles warm in a preheated oven (200°F) on a wire rack. Freeze leftover waffles for up to 2 months, wrapped individually. Variations include chocolate chip waffles (add 1/2 cup chocolate chips), blueberry waffles (add 1 cup blueberries), cinnamon roll waffles (add cinnamon and nutmeg), red velvet waffles (add cocoa powder and red food coloring), and savory waffles (omit sugar and vanilla, add cheese and chives).
