Garlic Thyme Roasted Mushrooms

  • 1.5 lbs mushrooms cremini, shiitake, oyster, or button
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped or 2 teaspoons dried
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar optional
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley, chopped for garnish, optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the mushrooms, minced garlic, chopped thyme, olive oil, balsamic vinegar (if using), salt, and pepper until evenly coated.
  3. Spread the mushrooms in a single layer on a baking sheet. Do not overcrowd.
  4. Roast for 20-25 minutes, or until the mushrooms are tender and nicely browned, tossing halfway through.
  5. Sprinkle with fresh parsley (if using) for garnish.
  6. Serve immediately and enjoy.

Notes

For best results, don't wash the mushrooms unless absolutely necessary; wipe them clean with a damp paper towel. To avoid mushy mushrooms, ensure the pan isn't overcrowded. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or skillet until warmed through. Add red pepper flakes, cheese, lemon zest, or bacon bits for flavor variations.
