Ingredients
  

  • 4 bone-in or boneless pork chops about 1-inch thick
  • 1 tablespoon olive oil
  • 5 tablespoons butter, divided
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Pat the pork chops dry with paper towels.
  2. In a small bowl, combine paprika, garlic powder, onion powder, dried thyme, salt, and pepper.
  3. Rub the spice mixture all over both sides of the pork chops.
  4. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  5. Carefully place the seasoned pork chops in the hot skillet, making sure not to overcrowd the pan. Cook in batches if necessary.
  6. Sear for 3-4 minutes per side, or until they develop a golden-brown crust.
  7. Use a meat thermometer to check the internal temperature of the pork chops. They should reach 145°F (63°C) for medium doneness.
  8. Remove the pork chops from the skillet and set them aside on a plate. Tent loosely with foil and let them rest for 5-10 minutes.
  9. In the same skillet, melt the remaining 4 tablespoons of butter over medium heat.
  10. Add the minced garlic and sauté for 1-2 minutes, until fragrant, being careful not to burn it.
  11. Stir in the chopped fresh parsley, lemon juice, and red pepper flakes (if using). Season with salt and pepper to taste.
  12. Let the sauce simmer for another minute, allowing the flavors to meld together.
  13. Place the rested pork chops back into the skillet with the garlic butter sauce.
  14. Spoon the sauce generously over the pork chops, ensuring they are well coated.
  15. Serve immediately, garnished with extra fresh parsley if desired.

Notes

Bone-in chops tend to be more flavorful, but boneless chops cook more quickly. Pork is safe to eat at 145°F (63°C). Overcooking will make them dry and tough. For extra insurance against dryness, you can brine the pork chops for 30 minutes to an hour before cooking. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet over medium heat with a little extra butter or olive oil.
