- Wash and thoroughly dry the strawberries. Cut off the stem end of each strawberry to create a flat base.
- Slice off the top third of each strawberry to create the Santa hat. Set the hat pieces aside.
- If using heavy cream, beat it with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form. If using mascarpone, whisk it with the powdered sugar and vanilla extract until smooth and creamy.
- Transfer the whipped cream or mascarpone to a piping bag fitted with a star tip (optional). Pipe a generous swirl of cream onto the flat surface of the strawberry base.
- Place the strawberry hat on top of the cream swirl.
- Use a small spoon or toothpick to place a tiny dollop of cream at the tip of the hat to create a pom-pom. Use mini chocolate chips or sprinkles to create eyes and buttons on the Santa body.
- Refrigerate the Strawberry Santas for at least 30 minutes before serving to allow the cream to firm up.
Notes
Choose large, firm strawberries for best results. Thoroughly drying the strawberries is crucial to prevent a soggy treat. Homemade whipped cream or mascarpone cheese provides the best stability and flavor. These can be stored in the refrigerator for up to 24 hours.
