Ingredients
  

  • 1 pound pre-cooked shrimp, peeled and deveined thawed if frozen
  • 1 tablespoon olive oil
  • 1 lime, juiced plus wedges for serving
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 12 small corn or flour tortillas
  • 1 cup shredded cabbage or lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1 avocado, sliced or 1/2 cup guacamole
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup salsa your favorite kind
  • Hot sauce optional

Method
 

  1. Prepare the Shrimp: In a medium bowl, combine the thawed shrimp, olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Toss to coat evenly.
  2. Heat the Shrimp: Heat a large skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes, or until heated through and slightly pink. Do not overcook.
  3. Warm the Tortillas: Warm the tortillas in a dry skillet, microwave (wrapped in a damp paper towel), or over an open flame.
  4. Assemble the Tacos: Place a generous portion of shrimp in each tortilla.
  5. Add Toppings: Top with shredded cabbage or lettuce, diced tomatoes, diced red onion, avocado slices or guacamole, cilantro, sour cream or Greek yogurt, and salsa.
  6. Serve Immediately: Serve the tacos immediately with lime wedges and your favorite salsa or hot sauce.

Notes

Don't overcook the shrimp! Aim for just heated through and slightly pink to avoid rubbery texture. For a spicier kick, add a pinch of cayenne pepper to the marinade. To save time, prepare the toppings and marinate the shrimp ahead of time. Store leftover shrimp and toppings separately in the refrigerator for up to 2 days.
