  • 2 lbs boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 3 bell peppers any color
  • 1 packet fajita seasoning or homemade, recipe below!
  • 1/4 cup chicken broth
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 lime, cut into wedges

Method
 

  1. Prep the Veggies: Slice the onion and bell peppers into strips.
  2. Layer the Ingredients: In the bottom of your crockpot, place the sliced onions and bell peppers.
  3. Add the Protein: Place the chicken breasts on top of the vegetables.
  4. Spice it Up: Sprinkle the fajita seasoning evenly over the chicken. Make sure every piece is nicely coated!
  5. Pour in the Liquids: Pour the diced tomatoes, green chiles, and chicken broth over the chicken and vegetables.
  6. Cook Low and Slow: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours. The chicken should be easily shreddable with a fork.
  7. Shred the Chicken: Once the chicken is cooked through, use two forks to shred it directly in the crockpot.
  8. Let it Simmer: Let the shredded chicken simmer in the juices for another 15-20 minutes. This allows the flavors to meld together beautifully. The mixture should be fragrant and slightly thickened.
  9. Warm the Tortillas: While the fajitas are simmering, warm your tortillas according to package directions.
  10. Assemble and Enjoy!: Serve the fajita mixture in warm tortillas with your favorite toppings. Sour cream, guacamole, salsa, cheese, and a squeeze of lime are all excellent choices.

Notes

For best results, use a good quality fajita seasoning or make your own using the provided recipe. Do not overcook the chicken, as it can become dry. If the fajitas are too watery, remove the lid during the last 30 minutes of cooking to allow some of the liquid to evaporate. Store leftovers in an airtight container in the refrigerator for up to 3 days.
