  • 2 ounces vodka
  • 1 ounce Irish cream liqueur Bailey's or similar
  • 1/2 ounce coffee liqueur Kahlua or similar
  • 1/2 ounce pumpkin spice liqueur optional
  • 1/2 ounce simple syrup or to taste
  • 1 ounce half-and-half or cream

Method
 

  1. Chill a martini glass in the freezer for at least 15 minutes.
  2. Prepare the rim: Spread a thin layer of simple syrup or honey on a small plate. Spread graham cracker crumbs on another plate.
  3. Dip the rim of the chilled martini glass into the simple syrup/honey, then into the graham cracker crumbs, coating evenly.
  4. In a cocktail shaker, combine pumpkin puree, vodka, Irish cream liqueur, coffee liqueur, pumpkin spice liqueur (if using), simple syrup, and half-and-half or cream.
  5. Fill the cocktail shaker with ice.
  6. Seal the shaker tightly and shake vigorously for 15-20 seconds.
  7. Strain the mixture into the prepared martini glass.
  8. Garnish with a dollop of whipped cream, a sprinkle of pumpkin pie spice, and a cinnamon stick.
  9. Serve immediately and enjoy!

Notes

For a smoother martini, whisk the pumpkin puree in a small bowl before adding it to the cocktail shaker to break up any clumps. Adjust the sweetness to your liking by adding more or less simple syrup. For a vegan version, use coconut cream instead of half-and-half and ensure your Irish cream liqueur is vegan-friendly. To make ahead, combine the pumpkin puree, simple syrup, and pumpkin spice liqueur in a jar and store in the refrigerator for up to 2 days. Rim martini glasses a few hours in advance and store them in a cool, dry place.
