  • Kosher salt for rim
  • 1 grapefruit wedge for rim and garnish
  • Large ice cubes

Method
 

  1. Prepare the glass: Run a grapefruit wedge around the rim of a highball glass. Dip the rim into a plate of kosher salt to coat it evenly. Fill the glass with large ice cubes.
  2. Build the base: Pour the tequila, fresh grapefruit juice, and fresh lime juice over the ice. Add agave syrup if using. Give the mixture a very brief, gentle stir to combine.
  3. Top and finish: Slowly pour the grapefruit soda down the side of the glass to preserve carbonation, filling to about half an inch from the top. Gently stir once more to integrate.
  4. Garnish and serve: Garnish with the spent grapefruit wedge on the rim or dropped into the drink. Serve immediately with a straw.

For the best flavor, always use fresh-squeezed grapefruit and lime juice. Stir gently after adding soda to avoid losing carbonation. The salt rim is essential for balancing flavors.
