Method
- In a medium bowl, cream together the softened butter and peanut butter until smooth.
- Gradually add the powdered sugar, mixing on low speed until combined.
- Stir in the vanilla extract and salt.
- Add the milk, one tablespoon at a time, until the mixture reaches a soft, scoopable consistency. Be careful not to add too much milk.
- Place the chocolate chips and coconut oil (or shortening, if using) in a double boiler or a microwave-safe bowl.
- If using a double boiler, heat water in the bottom pan until simmering. Place the bowl with the chocolate on top, making sure the bottom of the bowl doesn't touch the water. Stir occasionally until the chocolate is completely melted and smooth.
- If using a microwave, heat the chocolate in 30-second intervals, stirring in between, until melted and smooth. Be careful not to overheat the chocolate.
- Spoon a small amount of melted chocolate into each heart-shaped mold, coating the bottom and sides. You can use a small brush or the back of a spoon to help spread the chocolate evenly.
- Place the molds in the freezer for 5-10 minutes to allow the chocolate to set. This will create a solid base for the peanut butter filling.
- Remove the molds from the freezer and spoon the peanut butter filling into each heart, leaving a little space at the top for the final layer of chocolate.
- Pour the remaining melted chocolate over the peanut butter filling, covering it completely. Gently tap the molds on the counter to release any air bubbles.
- Return the molds to the freezer for at least 30 minutes, or until the chocolate is completely set.
- Once the chocolate is firm, gently remove the hearts from the molds. If they are sticking, you can try running a warm knife around the edges.
- Store the Chocolate Peanut Butter Valentine's Hearts in an airtight container in the refrigerator for up to a week.
Notes
For smoother chocolate, use coconut oil or shortening when melting. If the chocolate seizes, try adding a tablespoon of hot water and stirring vigorously. If the peanut butter filling is too soft, add more powdered sugar; if it's too dry, add more milk. Try using different nut butters or adding chopped nuts, mini chocolate chips, or sprinkles to the filling. You can also experiment with different flavored chocolate chips or drizzle melted white chocolate over the finished hearts.
