Cheesy Garlic Chicken Wraps

Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts
  • 4 large burrito-size tortillas flour or whole wheat
  • 4-5 cloves fresh garlic, minced
  • 2 cups shredded cheddar and mozzarella cheese blend
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Optional toppings: lettuce, tomato, red onion, avocado, sour cream, salsa

Method
 

  1. Pound chicken breasts to an even thickness (about 1/2 inch) between two sheets of plastic wrap.
  2. In a bowl, drizzle chicken with olive oil, then sprinkle generously with Italian seasoning, salt, and pepper. Coat both sides.
  3. Heat a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes per side, or until cooked through (internal temperature of 165°F or 74°C).
  4. Remove chicken from skillet and let it rest for a few minutes before slicing or shredding.
  5. In the same skillet, melt butter over medium heat.
  6. Add minced garlic and cook for 1-2 minutes, until fragrant, being careful not to burn it.
  7. Add a pinch of salt, pepper, and Italian seasoning to the garlic butter. Stir well.
  8. Lightly warm tortillas in a dry skillet or microwave for a few seconds to make them more pliable.
  9. Sprinkle a generous amount of cheese onto each tortilla.
  10. Top the cheese with the sliced or shredded chicken.
  11. Drizzle a generous amount of garlic sauce over the chicken.
  12. Add desired toppings, such as lettuce, tomato, red onion, or avocado.
  13. Fold in the sides of the tortilla, then fold the bottom up and over the filling, and roll tightly to create a wrap.
  14. Heat a skillet or grill pan over medium heat (optional).
  15. Place the wraps in the skillet or grill pan and cook for about 2-3 minutes per side, or until golden brown and the cheese is melted and gooey (optional).
  16. Slice the wraps in half and serve immediately.

Notes

Don't overfill the wraps. Use good quality cheese. You can prepare the chicken and garlic sauce ahead of time and store them in the refrigerator for up to 2 days. For variations, try using turkey, beef, or tofu instead of chicken. Experiment with different cheeses like pepper jack, provolone, or Monterey Jack. Try pesto, BBQ sauce, or buffalo sauce instead of garlic sauce. If adding wet ingredients, pat them dry first to prevent soggy wraps. Add a pinch of red pepper flakes to the garlic sauce for a little kick.
