Ingredients

  • 2 lbs carrots, peeled and sliced into 1/4-inch rounds or on the bias
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar, packed
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 tablespoon fresh parsley, finely chopped for garnish

Equipment

  • Large skillet or sauté pan with a lid
  • Vegetable peeler
  • Chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Spoon or spatula for stirring

Method

  1. Prepare the carrots: Wash, peel, and slice the carrots into uniform 1/4-inch thick pieces, either as rounds or on a diagonal (bias).
  2. Combine ingredients: In a large skillet or sauté pan with a lid, combine the sliced carrots, water, unsalted butter, brown sugar, and salt. Stir gently to mix.
  3. Simmer and steam: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer, cover the pan, and let the carrots cook for 10-12 minutes, or until they are nearly fork-tender.
  4. Create the glaze: Remove the lid from the pan and increase the heat back to medium-high.
  5. Reduce and thicken: Continue to cook, stirring frequently, for another 3-5 minutes. The liquid will evaporate and the butter-sugar mixture will thicken into a syrupy glaze that coats the carrots. Watch carefully to prevent the sugar from burning.
  6. Final touches: Remove the pan from the heat. Stir in the freshly cracked black pepper and garnish with fresh parsley, if using. Serve immediately while warm.

Notes

Expert Tips & Variations:
- Uniform Cuts: Ensure carrots are cut to a similar size for even cooking.
- Don't Overcrowd: Use a pan large enough to hold the carrots in a single layer for the best glaze reduction.
- Watch the Glaze: The sugar can burn quickly in the final stage, so stir constantly.
- Flavor Twists: Add a pinch of cinnamon or nutmeg for warmth, a sprig of thyme during cooking for a savory note, a splash of bourbon for depth, or red pepper flakes for a spicy kick.
- Substitutions: Maple syrup or honey can be used instead of brown sugar. For a dairy-free version, use a high-quality plant-based butter.
