  • 1 cup full-fat canned coconut milk, shaken well
  • 1/2 cup cold water or coconut water
  • 1-2 tablespoons maple syrup or honey, to taste
  • 1/2 teaspoon pure vanilla extract

Method
 

  1. Place the frozen strawberries into the basin of a high-powered blender first. Pour the full-fat coconut milk, cold water, chosen sweetener, vanilla extract, and pinch of salt on top.
  2. Secure the lid and start the blender on a low speed, gradually increasing to high. Blend for 45 to 60 seconds until the mixture is completely smooth and creamy with no remaining chunks.
  3. Pause the blender and taste the refresher. Adjust sweetness or vanilla if desired, and pulse for another 5 seconds to combine.
  4. Pour the finished refresher into tall glasses immediately. Garnish with a fresh strawberry, a sprig of mint, or a sprinkle of shredded coconut if you wish, and serve while frosty.

Notes

For the best texture, use full-fat canned coconut milk and shake the can vigorously before opening. If you only have fresh strawberries, add a large handful of ice to the blender.
