Ingredients
  

  • 1 pound pasta spaghetti, penne, or rigatoni
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 teaspoon sugar
  • Salt and black pepper to taste
  • 1 cup fresh basil leaves, roughly chopped
  • 1/4 cup grated Parmesan cheese optional, for serving

Method
 

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the pasta and cook according to package directions until al dente.
  3. Reserve about 1 cup of pasta water before draining.
  4. Drain the pasta well.
  5. While the pasta is cooking, heat the olive oil in a large skillet or pot over medium heat.
  6. Add the minced garlic and cook for about 30 seconds, until fragrant, being careful not to burn it.
  7. Pour in the crushed tomatoes and tomato sauce.
  8. Stir in the dried oregano, red pepper flakes (if using), and sugar.
  9. Season with salt and pepper to taste.
  10. Bring the sauce to a simmer, then reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally.
  11. Add the drained pasta to the sauce.
  12. Toss to coat the pasta evenly. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  13. Remove from heat and stir in the fresh basil leaves.
  14. Serve immediately, garnished with grated Parmesan cheese (if desired).
