Method
- Bring a large pot of salted water to a rolling boil.
- Add the pasta and cook according to package directions until al dente.
- Reserve about 1 cup of pasta water before draining.
- Drain the pasta well.
- While the pasta is cooking, heat the olive oil in a large skillet or pot over medium heat.
- Add the minced garlic and cook for about 30 seconds, until fragrant, being careful not to burn it.
- Pour in the crushed tomatoes and tomato sauce.
- Stir in the dried oregano, red pepper flakes (if using), and sugar.
- Season with salt and pepper to taste.
- Bring the sauce to a simmer, then reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally.
- Add the drained pasta to the sauce.
- Toss to coat the pasta evenly. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Remove from heat and stir in the fresh basil leaves.
- Serve immediately, garnished with grated Parmesan cheese (if desired).
Notes
Use high-quality ingredients for the best flavor. Don't overcook the pasta; al dente is key. Taste and adjust the seasonings as needed. Fresh basil is essential for the best aroma and flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop, adding a little water or broth to prevent drying. Variations include adding grilled chicken, shrimp, or sausage for protein, stirring in cream cheese or heavy cream for a creamier sauce, or adding sautéed vegetables like zucchini, bell peppers, or mushrooms.
