  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. Ensure they are very dry for crispy skin.
  3. In a small bowl, combine the olive oil, minced garlic, paprika, thyme, rosemary, onion powder, garlic powder, cayenne pepper (if using), salt, and pepper.
  4. Rub the marinade/rub all over the chicken thighs, making sure to get under the skin as well.
  5. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or a silicone baking mat. For even crispier skin, use a wire rack set inside the baking sheet.
  6. Roast for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown. The internal temperature should reach 165°F (74°C).
  7. Let the chicken thighs rest for 5-10 minutes before serving. This allows the juices to redistribute.

Notes

For extra crispy skin, consider broiling the chicken for the last few minutes of cooking, but watch it carefully to prevent burning. You can prepare the chicken thighs ahead of time by marinating them and storing them in the refrigerator for up to 24 hours. Serve with roasted vegetables, mashed potatoes, rice, salad, or green beans. Experiment with different herbs and spices like smoked paprika, chili powder, Italian seasoning, or lemon pepper.
