Ingredients
  

  • 6-8 medium apples such as Honeycrisp, Granny Smith, or Gala
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, cut into small pieces
  • 1 cup rolled oats not instant
  • 3/4 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans or walnuts optional

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.
  3. Pour the apple mixture into the prepared baking dish and dot the top with the small pieces of butter.
  4. In a separate bowl, whisk together the rolled oats, flour, brown sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. If the butter gets too warm, place the bowl in the freezer for a few minutes.
  6. Stir in the chopped pecans or walnuts (if using).
  7. Sprinkle the oat topping evenly over the apple filling.
  8. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the apple filling is bubbly. If the topping starts to brown too quickly, loosely tent the dish with foil during the last 10-15 minutes of baking.
  9. Let the crisp cool slightly before serving to allow the filling to thicken.

Notes

For the best results, use a combination of sweet and tart apples. Cold butter is key for a crumbly topping. Don't overmix the topping. Add nuts for extra flavor and crunch, if desired. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. You can assemble the crisp a day in advance and store it, unbaked, in the refrigerator. Add other fruits, such as blueberries, raspberries, or cranberries, to the apple filling. Experiment with different spices, such as ginger, cardamom, or allspice. For a gluten-free version, use gluten-free all-purpose flour and certified gluten-free oats. For a vegan version, use vegan butter and vegan-friendly sugar.
