Ingredients
  

  • 2 lbs chicken wings, separated at the joints and wing tips removed
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup Frank's RedHot Original Cayenne Pepper Sauce
  • 1 tbsp white vinegar
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional
  • Pinch of salt to taste

Method
 

  1. Pat the chicken wings completely dry with paper towels.
  2. In a large bowl, toss the wings with baking powder, salt, and pepper. Ensure the wings are evenly coated.
  3. Place the wings on a wire rack set over a baking sheet. Refrigerate, uncovered, for at least 4 hours, or preferably overnight.
  4. Preheat your oven to 400°F (200°C).
  5. Bake the wings for 30 minutes. Then, flip them and bake for another 20-30 minutes, or until the internal temperature reaches 175-185°F (80-85°C) and the skin is golden brown and crispy.
  6. While the wings are baking, prepare the sauce. In a saucepan over medium heat, melt the butter.
  7. Add the hot sauce, vinegar, garlic powder, and cayenne pepper (if using). Whisk until well combined and simmer for 2-3 minutes to allow the flavors to meld. Adjust salt to taste.
  8. Once the wings are cooked, immediately transfer them to a large bowl.
  9. Pour the Buffalo sauce over the wings and toss to coat evenly.
  10. Serve the Buffalo wings hot with your favorite dipping sauces, such as blue cheese or ranch dressing. Celery and carrot sticks are classic accompaniments.

Notes

For extra crispy skin, ensure the wings are completely dry before applying the baking powder mixture and refrigerating overnight. Adjust the amount of cayenne pepper in the sauce to your desired level of spiciness. Serve immediately for the best texture.
