Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese optional
  • 1/2 cup Buffalo wing sauce
  • 1/4 cup ranch dressing
  • 2 green onions, thinly sliced
  • Tortilla chips, for serving
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Crackers, for serving
  • Toasted baguette slices, for serving

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken breasts with olive oil, salt, pepper, and garlic powder.
  3. Bake for 25-30 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
  4. Let chicken cool slightly, then shred with two forks or a stand mixer.
  5. In a large bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth and creamy.
  6. Add shredded chicken, cheddar cheese, blue cheese (if using), Buffalo wing sauce, and ranch dressing.
  7. Stir until everything is well combined.
  8. Pour mixture into an 8x8 inch baking dish.
  9. Bake in preheated oven for 20-25 minutes, or until dip is hot and bubbly and cheese is melted and slightly browned.
  10. Alternatively, transfer the mixture to a slow cooker and cook on low for 2-3 hours, or until heated through. Stir occasionally.
  11. Remove dip from oven (or slow cooker) and garnish with sliced green onions.
  12. Serve immediately with tortilla chips, celery sticks, carrot sticks, crackers, or toasted baguette slices.

Notes

For a spicier dip, add cayenne pepper or use a hotter Buffalo wing sauce. For a milder dip, use a less spicy sauce or add a tablespoon of sugar. You can substitute cheddar cheese with Monterey Jack, Pepper Jack, or a blend of cheeses. The dip can be prepared up to 24 hours in advance and stored in the refrigerator. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To thin the dip, add milk or chicken broth. To thicken, add cornstarch slurry (1 tbsp cornstarch + 1 tbsp cold water). Keep dip warm in a small slow cooker or chafing dish.
