Notes

Use softened cream cheese for easy mixing. Don't overbake to avoid a dry, separated dip. Adjust the spice level to your preference by adding cayenne pepper or using a mild buffalo sauce. The dip can be assembled ahead of time and stored in the refrigerator for up to 24 hours. It can also be made in a slow cooker on low for 2-3 hours. Experiment with different cheese blends like pepper jack or Monterey Jack. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave, oven, or on the stovetop. Use leftovers as a spread on sandwiches or to make Buffalo Chicken Quesadillas.
