- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, whisk together the 2 cups flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the 1 tsp vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the diced apples.
- Pour the batter into the prepared baking pan and spread evenly.
- In a medium bowl, combine the 1 cup flour, brown sugar, and 1/2 tsp cinnamon (crumb topping).
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the apple cake batter.
- Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean. If the topping starts to brown too quickly, loosely tent the pan with foil.
- Let the cake cool completely in the pan before drizzling with the cinnamon apple drizzle.
- In a small saucepan, melt the 1/2 cup butter over medium heat.
- Stir in the brown sugar, milk, and cinnamon (drizzle). Bring to a simmer and cook for 1-2 minutes, stirring constantly.
- Remove from heat and stir in the vanilla extract (drizzle).
- Gradually whisk in the powdered sugar until smooth. If the drizzle is too thick, add a little more milk. If it's too thin, add a little more powdered sugar.
- Drizzle the cinnamon apple drizzle evenly over the cooled cake.
- Let cool completely before serving.
Notes
For the best flavor, use a mix of tart and sweet apples like Granny Smith and Honeycrisp. Ensure the butter for the crumb topping is very cold for a perfect crumbly texture. You can add chopped pecans or walnuts to the crumb topping for extra crunch. Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. Warm individual slices in the microwave for a few seconds before serving. For an enhanced flavor, consider browning the butter used in the crumb topping before adding the other ingredients.
