  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions, for garnish
  • Blue cheese crumbles, for garnish optional
  • 1/2 teaspoon garlic powder
  • Tortilla chips, for serving
  • Celery sticks, for serving
  • Carrot sticks, for serving

Method
 

  1. Preheat oven to 350°F (175°C). If using a slow cooker, skip this step.
  2. In a large bowl, combine the softened cream cheese, ranch dressing, buffalo wing sauce, garlic powder, cheddar cheese, and mozzarella cheese.
  3. Add the shredded chicken to the bowl.
  4. Mix everything together until well combined.
  5. Oven Method: Spread the mixture evenly into a baking dish (an 8x8 inch dish works perfectly). Bake for 20-25 minutes, or until the dip is bubbly and the cheese is melted and lightly golden.
  6. Slow Cooker Method: Transfer the mixture to a slow cooker. Cook on low for 1-2 hours, or until heated through and bubbly, stirring occasionally.
  7. Remove from the oven or slow cooker.
  8. Garnish with chopped green onions and blue cheese crumbles (if using).
  9. Serve immediately with your favorite dippers.

Notes

For easier mixing, ensure cream cheese is fully softened. Adjust buffalo sauce to taste based on spice preference. Dip can be prepared up to 24 hours in advance and stored in the refrigerator; add extra cooking time when ready to bake. For variations, add Monterey Jack or Pepper Jack cheese, diced bell peppers, chopped celery, spinach, or crumbled cooked bacon.
