- In a medium saucepan, combine water, butter (or coconut oil), and salt. Bring to a boil over medium heat.
- Once boiling, remove from heat and immediately add the flour. Stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides of the pan.
- Let the dough cool slightly for about 5 minutes.
- Stir in the vanilla extract.
- Add the eggs one at a time, mixing well after each addition until fully incorporated. The dough will seem a little separated at first, but keep mixing until smooth.
- Transfer the churro dough to a piping bag fitted with a large star tip (or a zip-top bag with a corner snipped off).
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with cooking spray.
- Pipe small, bite-sized pieces of dough (about 1-2 inches long) directly into the air fryer basket, leaving some space between them. Don't overcrowd! Cook in batches if necessary.
- Air fry for 8-10 minutes, or until golden brown and crispy. Keep a close eye on them, as air fryers can vary.
- While the churro bites are air frying, prepare the cinnamon-sugar coating in a shallow bowl by combining the sugar and cinnamon.
- Immediately after removing the churro bites from the air fryer, toss them in the cinnamon-sugar mixture until evenly coated.
- Serve warm and enjoy immediately for the best texture.
Notes
For best results, use a good quality non-stick cooking spray. Store any leftover churro bites in an airtight container at room temperature for up to 2 days. Re-crisp in the air fryer for 1-2 minutes before serving. Experiment with flavor variations by adding orange zest or spices like nutmeg or cardamom to the dough or cinnamon-sugar mixture. Dipping in melted chocolate or caramel sauce is also delicious!
