Air Fryer Chicken Sausage and Veggies

This is the ultimate 15-minute weeknight dinner solution. Fully-cooked chicken sausage and fresh vegetables are tossed with simple seasonings and air-fried to perfection, resulting in a meal with crispy, caramelized sausage and tender-crisp, charred veggies. Ingredients
  

  • 1 large bell pepper any color
  • 1 medium zucchini or yellow squash, cut into 1-inch chunks
  • 1 small red onion, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat the air fryer to 400°F (200°C) for 3 minutes, if your model recommends it.
  2. Slice the chicken sausage into 1/2-inch thick coins. Chop the bell pepper and zucchini into 1-inch chunks. Slice the red onion into similar-sized wedges.
  3. Place all chopped sausage and vegetables into a large mixing bowl.
  4. Drizzle with olive oil. Sprinkle the garlic powder, smoked paprika, dried oregano, salt, and pepper evenly over everything.
  5. Toss thoroughly until every piece is lightly and evenly coated with the oil and seasonings.
  6. Transfer the seasoned mixture to the air fryer basket, spreading it out in a single, even layer. Avoid major stacking.
  7. Air fry at 400°F (200°C) for 10-12 minutes.
  8. Halfway through the cooking time (at the 5-6 minute mark), pause the air fryer, pull out the basket, and give it a vigorous shake to redistribute the pieces for even cooking.
  9. Check for doneness at the 10-minute mark. The sausage should be browned and crispy, and the vegetables should be tender with charred spots.
  10. Carefully transfer the contents to a serving platter or plates. Let cool for one minute before serving, as the interior will be very hot.

Notes

For best results, do not overcrowd the basket; cook in batches if necessary. Ensure vegetables are thoroughly dried after washing to promote browning. Shaking the basket halfway is crucial for even cooking. Creative add-ins: toss finished dish with pesto, lemon juice, feta cheese, or a drizzle of balsamic glaze. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best texture.
