Winter’s best slow cooker beef and vegetable stew

This is a simple stew that just happens to be a complete meal in one as it features beef, potatoes and vegetables. It makes a big batch so if you end up with leftovers, don’t worry – it will keep beautifully in the fridge for a couple of days. You can also freeze it for up to three months – dinner done for another day!

  • 2 tbsp vegetable oil

  • 1kg gravy beef, trimmed, cut into 3cm pieces

  • 1 large brown onion, coarsely chopped

  • 2 tbsp plain flour

  • 250ml (1 cup) beef stock

  • 400g can diced tomatoes

  • 600g coliban potatoes, peeled, cut into 3cm pieces

  • 2 carrots, peeled, halved, thickly sliced

  • 1 large swede, peeled, cut into 1.5cm chunks

  • 200g green beans, cut into 3cm pieces

4 Method Steps

  • Step 1

    Heat 1 tbsp oil in a large frying pan over medium-high heat. (Alternatively, use the Browning function on a slow cooker.) Add one-third of beef

    (1kg gravy beef, trimmed, cut into 3cm pieces) and cook, turning occasionally, for 3 minutes or until browned. Repeat in 2 more batches with the remaining beef. Transfer to slow cooker.

  • Step 2

    Heat the remaining oil in the pan over medium heat. Add the onion (1 large brown onion, coarsely chopped) and cook, stirring, for 4 minutes, or until lightly browned. Add the flour (2 tbsp plain flour) and cook, stirring, for 1 minute.

  • Step 3

    Gradually add the stock (250ml (1 cup) beef stock), scraping to dislodge any bits that have cooked onto the base, until well combined. Add the tomato (400g can diced tomatoes) and stir until combined. Bring mixture to a simmer then pour into slow cooker. Add potato (600g coliban potatoes, peeled, cut into 3cm pieces), carrot (2 carrots, peeled, halved, thickly sliced) and swede (1 large swede, peeled, cut into 1.5cm chunks) to slow cooker. Cover and cook on Low for 7 hours.

  • Step 4

    Add the beans (200g green beans, cut into 3cm pieces) to the slow cooker and cook for 1 hour. Season and serve.

Recipe Notes

At first, it may look like there’s not enough liquid in the slow cooker, but don’t worry as a delicious gravy will form as it cooks.
