Watermelon and cucumber Christmas trees

This cute festive finger food idea is easy to whip up and fun to eat! Make it as an entree, starter, simple snack for the kids or decoration for your Christmas table.

  • 1/3 cup caster sugar

  • 1/3 cup white balsamic vinegar

  • 1/4 cup water

  • 1/4 of a watermelon

  • 2 telegraph cucumbers

  • 40g crumbled feta

  • Step 1

    Combine caster sugar

    (1/3 cup caster sugar), white balsamic vinegar (1/3 cup white balsamic vinegar) and water (1/4 cup water) in a small saucepan. Simmer over medium heat for 2 minutes until sugar has dissolved. Remove from heat, allow to cool.

  • Step 2

    Cut 2 large slices watermelon (1/4 of a watermelon) into 20 x 2cm squares. Use a small star cutter to cut 20 stars from leftover watermelon pieces. Peel long strips from the cucumbers (2 telegraph cucumbers) and thread onto toothpicks to form a tree. Secure to a watermelon square. Add a star to the top.

  • Step 3

    Drizzle trees with balsamic glaze and sprinkle with crumbled feta (40g crumbled feta).
