Ultimate vegan breakfast wrap

Packed with black beans and avocado, this quick and easy vegan breakfast wrap will fuel you for the day ahead.

9 Ingredients

  • 125g can black beans, rinsed, drained

  • Pinch of dried chilli flakes

  • 2 tsp fresh lemon juice

  • 40g wholegrain wrap

  • 20g baby spinach

  • 1 roma tomato, sliced

  • 1/4 avocado, sliced

  • 2 tbsp fresh basil leaves

  • Lemon wedge, to serve

  • Step 1

    Coarsely mash the beans

    (125g can black beans, rinsed, drained) in a bowl. Stir in chilli (Pinch of dried chilli flakes) and juice (2 tsp fresh lemon juice). Season.

  • Step 2

    Spread bean mixture over wrap (40g wholegrain wrap). Top with the spinach (20g baby spinach), tomato (1 roma tomato, sliced), avocado (1/4 avocado, sliced) and basil (2 tbsp fresh basil leaves). Serve with lemon wedge (Lemon wedge, to serve), if using.
