Tuscan bean and avocado toast

Smash up some beans and whatever veggies you have lying around to make this healthy anytime snack – it makes a nourishing breakfast, an afternoon pick-me-up or a lazy dinner.

  • 125g can four bean mix, rinsed, drained

  • 1 small vine-ripened tomato, finely chopped

  • 1 tbsp chopped fresh continental parsley leaves

  • 1 tsp balsamic vinegar

  • 1 slice (about 45g) wholegrain sourdough bread, toasted

  • 1/4 small avocado, mashed

  • 1 tsp extra virgin olive oil
