Thermomix zucchini slice

This is an easy take on the healthy and classic zucchini slice using the Thermomix – and it’s vegetarian!

8 Ingredients


  • 380g (about 2) zucchini, each cut into 4 pieces

  • 1 brown onion, quartered

  • 1 tbsp, plus 80g olive oil

  • 150g (about three rashers) smoked rindless bacon, cut into large pieces

  • 5 eggs

  • 100g (2⁄3 cup) self-raising flour

  • 1 tsp baking powder

  • 100g (1 cup) pre-grated cheddar

7 Method Steps


  • Step 1

    Preheat oven to 180°C/160°C fan forced. Grease and line a 17 x 26cm slice pan with baking paper, allowing the two long sides to overhang.

    (380g (about 2) zucchini, each cut into 4 pieces) the Thermomix mixing bowl and grate for 10 seconds/speed 4. Transfer to a bowl and set aside.


  • Step 3

    Place the onion (1 brown onion, quartered) and bacon (150g (about three rashers) smoked rindless bacon, cut into large pieces) into the Thermomix mixing bowl and chop for 5 seconds/speed.

  • Step 4

    Use the spatula to scrape down sides of the mixing bowl. Add the 1 tbsp of oil and sauté for 5 minutes/120C/speed 1.

  • Step 5

    Add the eggs (5 eggs), flour (100g (2⁄3 cup) self-raising flour), baking powder (1 tsp baking powder), cheese (100g (1 cup) pre-grated cheddar), 80g of olive oil and the grated zucchini. Combine for 5 seconds/speed 4.

  • Step 6

    Pour the zucchini mixture into the prepared pan. Bake for 35 minutes or until golden.

  • Step 7

    Serve the zucchini slice hot or cold, cut into pieces.
