Thermomix peanut butter banana ice-cream

Who said healthy desserts can’t be delicious? Well this sweet and nutty treat is not only good-for-you, but can be whipped up in 15 minutes using a Thermomix!

6 Ingredients

  • 250 g banana, cut into pieces and frozen

  • 100 g smooth peanut butter

  • 100 g coconut milk

  • Coconut nectar, to serve

  • Cacao nibs, to serve

  • Coconut flakes, toasted, to serve

4 Method Steps

  • Step 1

    Place frozen banana

    (250 g banana, cut into pieces and frozen) into mixing bowl and blend 10 sec/speed 6.

  • Step 2

    Add peanut butter (100 g smooth peanut butter) and coconut milk (100 g coconut milk) and blend 40 sec/speed 6, until almost smooth.

  • Step 3

    Scrape down sides of mixing bowl with spatula, then blend 20 sec/speed 6, until smooth.

  • Step 4

    If ice cream is too soft, transfer into a freezable container and place into freezer until firm. Drizzle with coconut nectar (Coconut nectar, to serve) (optional) and sprinkle with cacao nibs (Cacao nibs, to serve) (optional) and toasted coconut flakes (Coconut flakes, toasted, to serve) to serve.

Recipe Notes

Be sure to use pure peanut butter made from 100 per cent nuts and free from refined oils and added sugar. You can also make your own peanut butter in your Thermomix® – you’ll find the recipes on Cookidoo®.

When buying coconut flakes, try to choose brands with no added sulphur dioxide. Organic brands are generally sulphur-free. Sulphur dioxide (220) is a preservative that’s been associated with a range of food intolerance symptoms and can particularly affect asthma sufferers.
