Thermomix lemon curd

No standing over a hot stove whisking constantly, this Thermomix recipe creates the silkiest lemon curd – in just one step! Simply add it to a tart or pie crust for a sweet citrus kick.

5 Ingredients


  • 160ml (2/3 cup) fresh lemon juice

  • 80g unsalted butter, melted, cooled

  • 100g (1/2 cup) caster sugar

  • 2 eggs

  • 2 tsp finely grated lemon rind

2 Method Steps


  • Step 1

    Insert butterfly whisk in the Thermomix mixing bowl. Add the lemon juice

    (160ml (2/3 cup) fresh lemon juice), butter (80g unsalted butter, melted, cooled), sugar (100g (1/2 cup) caster sugar), eggs (2 eggs) and rind (2 tsp finely grated lemon rind). Cook for 8 minutes/80C/Speed 8.


  • Step 2

    Pour into a 250ml (1 cup) jar and set aside to cool completely. Seal and store in the fridge.
