The Thermomix does the grating and the mixing for you, making this lightly spiced, moist and healthy cake even easier. With the crunch of the walnut and sweetness of the cream cheese icing, this cake is heavenly!
300g carrots, peeled, each cut into 4 pieces
125g (1/2 cup) light-flavoured olive oil
220g (1 1/3 cups, lightly packed) brown sugar
300g (2 cups) self-raising flour
1/4 tsp bicarbonate of soda
1 tsp ground cinnamon
1/2 tsp ground ginger
100g pkt walnut halves
432g can crushed pineapple
Cream cheese icing
250g pkt cream cheese, at room temperature
200g unsalted butter, at room temperature
300g (2 cups) icing sugar mixture
1 tsp vanilla extract
7 Method Steps
Step 1Preheat the oven to 180C/160C fan forced. Line two 22cm round cake pans with baking paper.
Step 2Place the carrot(300g carrots, peeled, each cut into 4 pieces) in the Thermomix mixing bowl and grate for 5 seconds/speed 6.

Step 3Add the oil (125g (1/2 cup) light-flavoured olive oil), eggs (3 eggs), sugar (220g (1 1/3 cups, lightly packed) brown sugar), flour (300g (2 cups) self-raising flour), bicarb (1/4 tsp bicarbonate of soda) cinnamon (1 tsp ground cinnamon), ginger (1/2 tsp ground ginger), nutmeg (Pinch nutmeg) and a large pinch of salt to the bowl. Mix for 10 seconds/speed 5
Step 4Reserve 8 walnuts. Add remaining walnuts and the undrained pineapple (432g can crushed pineapple) to the bowl and mix 10 seconds/speed 5.
Step 5Divide the mixture between the prepared pans. Bake for 40-45 minutes or until firm to the touch. Set aside for 10 minutes to cool slightly before turning out onto wire racks to cool completely.
Step 6To make the icing, place the cream cheese (250g pkt cream cheese, at room temperature), butter (200g unsalted butter, at room temperature), icing sugar (300g (2 cups) icing sugar mixture) and vanilla (1 tsp vanilla extract) in the Thermomix mixing bowl. Mix for 20 seconds/speed 5.
Step 7Transfer a cake to a serving plate. Spread top with half of the icing. Place the remaining cake on top and spread top with the remaining icing. Top with the reserved walnuts. Cut into slices to serve.
