Thai beef drunken noodle stir-fry

This superfood stir-fry is packed with antioxidant rich veg and ready to eat in 25 minutes. The thick rice noodles and tender beef are the perfect vessel for the smoky, umami sauce.

14 Ingredients

  • 200g dried pad Thai rice noodles

  • 60ml (1/4 cup) oyster sauce

  • 60ml (1/4 cup) light soy sauce

  • 1 tbsp fish sauce

  • 3 tsp brown sugar

  • 60ml (1/4 cup) peanut or grapeseed oil

  • 350g beef eye fillet, thinly sliced

  • 4 garlic cloves, finely chopped

  • 1 long fresh red chilli, deseeded, finely chopped

  • 5 green shallots, cut into 3cm pieces

  • 1 red capsicum, deseeded, thinly sliced

  • 125g pkt baby corn

  • 250g pkt superfood vegetables stir-fry mix

  • 1/2 cup fresh Thai basil leaves

    (200g dried pad Thai rice noodles) in a large saucepan of boiling water for 5 minutes or until just tender. Drain. Refresh under cold running water. Combine the oyster sauce (60ml (1/4 cup) oyster sauce), light soy sauce (60ml (1/4 cup) light soy sauce), fish sauce (1 tbsp fish sauce), brown sugar (3 tsp brown sugar) and 1 tbsp water in a jug.

  • Step 2

    Heat 1 tbsp of the oil n a large wok over high heat. Add the beef (350g beef eye fillet, thinly sliced). Stir-fry for 1 minute or until browned. Add 1 tbs sauce and stir-fry for 30 seconds. Transfer to a bowl.

  • Step 3

    Heat the remaining oil in the wok over high heat. Add the garlic (4 garlic cloves, finely chopped) and chilli (1 long fresh red chilli, deseeded, finely chopped). Cook, stirring, for 30 seconds or until aromatic. Add the pale sections of shallot (5 green shallots, cut into 3cm pieces), capsicum (1 red capsicum, deseeded, thinly sliced) and corn (125g pkt baby corn). Stir-fry for 1 minute. Add the vegetable (250g pkt superfood vegetables stir-fry mix) stir-fry mix. Stir-fry for 3-4 minutes or until tender-crisp. Add the noodles, remaining sauce and the green sections of shallot. Stir-fry for 1 minute or until warmed through. Stir through half of the basil (1/2 cup fresh Thai basil leaves). Sprinkle with the remaining basil to serve.
