Tequila sunrise martini mousse

Dust off your vintage glasses, this cocktail is a blast from the
past – reinvented as a velvety orange jelly and mousse!

6 Ingredients


  • 2 x 85g packet orange jelly crystals

  • 250ml (1 cup) boiling water, plus 200ml, extra

  • 375ml (1 1/2 cups) thickened cream

  • 50ml tequila

  • Thinly sliced orange, to serve

  • Maraschino cherries, to decorate

4 Method Steps


  • Step 1

    Place 1 packet of jelly crystals

    (2 x 85g packet orange jelly crystals) in a heatproof bowl. Pour over the boiling water (250ml (1 cup) boiling water, plus 200ml, extra) and stir until dissolved. Set aside, stirring occasionally, for 10 minutes or until cooled slightly. Place in fridge, stirring occasionally, for 15-20 minutes or until thick and syrupy.


  • Step 2

    Use electric beaters to beat the cream (375ml (1 1/2 cups) thickened cream) in a large bowl until soft peaks form. Gradually beat in the cooled jelly mixture until firm peaks form. Divide the mousse mixture among 6 martini glasses and transfer to the fridge for 30 minutes to set slightly.

  • Step 3

    Place the remaining jelly crystals in a heatproof bowl. Pour over the extra boiling water. Stir until dissolved. Add the tequila (50ml tequila) and stir to combine. Set aside, stirring occasionally, for 10 minutes or until cooled slightly. Place in the fridge, stirring occasionally, for 15-20 minutes or until thick and syrupy. Carefully pour the mixture among glasses and return to the fridge for 4 hours or until set.

  • Step 4

    Thread orange (Thinly sliced orange, to serve) rind strips or slices and cherries (Maraschino cherries, to decorate) onto cocktail skewers. Arrange on top of each mousse to serve.
